Easy Dum Chicken Biryani at Home: Layered Basmati Rice With Tender, Well-Spiced Chicken

News Cuff

Biryani is the one dish a Pakistani kitchen never has to vote on. Friday lunch or a full house of guests, once the pot goes on, everyone is in. And a good biryani is not about how much spice you throw in, or how orange the rice looks. It turns on two things: rice that stops at seventy percent, and a dum seal tight enough that no steam escapes. Get those two right and a home biryani can stand next to any deg in the bazaar.

Ingredients

Half a kilo of bone-in chicken; half a cup of thick yogurt; two tablespoons of ginger-garlic paste; one teaspoon of red chilli; half a teaspoon of turmeric; one teaspoon of garam masala; one tablespoon of ground coriander; the juice of half a lemon; salt to taste; and a handful each of mint and fresh coriander. For the rice: two cups of basmati, soaked for thirty minutes, with two bay leaves, four green cardamoms, three or four cloves and a stick of cinnamon. For the layers: two large onions, sliced thin and fried golden, two tablespoons of ghee, and a pinch of saffron soaked in two tablespoons of warm milk.

Method

Coat the chicken with the yogurt, ginger-garlic, chilli, turmeric, garam masala, coriander, lemon and salt, and leave it for at least an hour, overnight if you can. Boil a large pot of water with salt and the whole spices, add the rice and cook it to seventy percent, no more; a grain pressed between the fingers should still show a faint white core. Drain and set aside. In a heavy-bottomed pot, heat oil and ghee, fry the onions golden and lift half of them out. Add the marinated chicken to the same pot and cook on a medium flame until the meat is tender and the masala releases its oil, but do not dry the gravy out completely. Now layer: chicken first, then half the rice, then fried onions, mint, coriander and half the saffron milk; repeat with the remaining rice and onions, and finish with the rest of the saffron milk and the ghee. Seal the lid with dough, give it five minutes on a high flame and then fifteen to twenty on the lowest flame your stove has. Switch off and wait ten minutes before you open it.

Serving it properly

Do not stir the pot. Lift out a wide portion from the side so the layers come up intact, and serve with a plain yogurt raita and salad. One small habit worth stealing: let the biryani stand five minutes after the seal is broken. The aroma settles into every grain, and the first serving tastes like the last.
